Pike-perch filet with Basil-Rice

Do you love fish? How about this delicious recipe, created by Iwan himself, according to the motto Italy meets Indian: Fried pike-perch filet with tomato-basil rice and curry sauce. This mix sounds strange, but is just one more reason to try this recipe and to be convinced by his taste.

What do yo need?

Pike Perch, Rice

Garlic, Tomatoes, Basil, Onion, Coconut Milk, Lemon, Currypaste

Preparation of the tomato-basil rice

Step 1: Onions and garlic shall be roasted until they are golden.

Step 2: Add tomatoes and tomato paste to it as well as some water. Leave it to simmer for 10 minutes.

Step 3: Put rice, a little bit of Vegeta, pepper into boiling water and let it simmer for 15 minutes on low heat.

Step 4: Just before the rice is through, add basil. The rice should rest for 15 minutes.

Preparation of curry sauce

Step 1: You can buy curry paste in different variations in every Indian store. This recipe  was cooked with mild curry paste. a . 4-5 spoons of the paste should be heated in a saucepan.

Step 2: Add half of the coconut milk to the paste and let it simmer.

Step 3: Once the consistency is creamy, add some Vegeta and lemon juice. Taste it and ad some seasoning necessary (lemon juice, Vegeta or coconut milk).

Preparation of the pike-perch filet

Step 1: Put the filet in a pan and fry it in olive oil on both sides.

Step 2: Sprinkle the filet with some salt and lemon.
