Mediterranean vegetable lasagna

From time to time my hubby surprises me with a delicious vegetable lasagna, he created by himself. For this recipe you need to invest a little bit more of your precious time, but it´s really worth it. It´s very yummy and it reminds one of one of my favorite countries ever, the beautiful Greece. Here are all the ingredients needed.

What do you need?

1 Onion,
2 Garlic cloves,
1 Melanzani,
1 Zucchini,
3 Carrots,
2 Paprika,
Olive oil,
500 grams Tomatoes,
Lasagne sheets,
Sour cream,
1/2 lemon

Step 1: First heat the pan, then put some olive oil in. After it´s heated up add the chopped onion and garlic.
Step 2: Cut the seasonal vegetable for example aubergine, zucchini, carrots, paprika and tomatoes into slices and fry them in a pan. Tip: The veggies have to be fried seperated because of the taste.
Step 3: For the tomato sauce fresh or sieved tomatoes are needed as well as basil, oregano, pepper and ¼ l water. When it is cooked, add the onion and the garlic (Step 1) as well as the juice of a half lemon.
Step 4: First put the vegetable mixture into the baking dish, then pour the sauce and follow this with a single layer of lasagne sheets. Repeat this several times and end up with a single layer of sour cream.
Step 5: Preheat oven to 250°. Turn the oven down to 180° and bake the lasagne for 45 minutes. Bon appétit!
